chili relleno souffle ~

  I love Chili Rellenos but I don't like the prep or the frying so I decided to morph different recipes to ultimately perfect this this Chili Relleno casserole.  If you whisk the whole egg into milk it will taste the same but I wanted to get the puff that individual battered Rellenos have so I whisked the egg whites separately then folded them into the beaten yolks with the milk and spices. There are fewer foods that evoke more sheer joy other than bread, in any form. Crusty sourdough, Challah, No-knead Artisan and Focaccia! I used my basic pizza dough recipe but added more yeast and water to hydrate and lift the dough.for   You can also add herbs, roasted garlic, sun dried tomatoes, basil pesto and/or cheese what ever your heart desires. Pizza dough is unique to all who eat! There are those that love it puffy, chewy, bready, thin, crispy....we all have our favorites.  I love a yeasty smelling slightly chewy thinner crust.  The following recipe is just that. spinach & artichoke pie ~

Spanikopita fans this is a wonderful dish...easy to prep, bake and enjoy.  Instead of squeezing the spinach to get rid of the water I saute the moisture out of it with the shallots and artichoke hearts.  Saves my shirt from spinach stains as I always seem to splash spinach juice all over the place in an attempt to dry it out! I love a good curry and always thought they had to simmer for hours. This one doesn't! I did you a combination of curry ingredients to develop the richness. chicken harissa ~ sheet pan style

Cooking all of your dishes ingredients on a sheet pan not only beautifully melds the flavors but guarantees a quick and easy clean up. This is a tasty recipe for a wonderful appetizer or an addition to the evening meal. smokey tomato vinaigrette ~

This particular vinaigrette can be morphed into basically any sauce you might fancy.  Use it as a sweet and tangy salsa, add it to an aioli for a terrific sweet kick, toss it in a pasta salad or drizzle it on grilled vegetables. The lightness of a popover and the richness of a fritatta...my perfect paring for any meal.  This recipe can be adapted to fit what ever you like with you morning or evening egg dishes.
