skillet pan pizza ~

So.....if making your own pizza dough stops you from this creation ....buy it then!  There are some wonderful doughs you can get from your local pizzeria or Whole Foods, Trader Joes, just check out your local markets. See what is around. However this dough is so easy. I make mine the morning before I am going to make pizza because I love the depth of flavor you get when you cold ferment the dough in the fridge.  Another time saver if you need one ...  purchase a good tomato sauce instead of making your own. Rao's is a good substitute. That [...]

roasted vegetables with cous cous ~

As we emerge from winter into the blooms and gardens of Spring and Summer our tastes change. We lighten our recipes seeking out healthy but tantalizing dishes leaving behind the cozy stews and soups of Winter. With the variety of vegetables that our farmers markets share with us, in both taste and color, we are inspired to create meals for our friends and families.  This recipe is one of those. From the beautiful marbled white and purple eggplants to the watermelon radishes the colors turn into paintings on our plates. As the saying goes, “we eat with our eyes first”.  The [...]

porchetta ~

Quite possibly the easiest recipe that renders the most scrumptious pork shoulder... it does require some fore thought but is definitely worth the prep. It cooks itself to perfection in a low and slow method. I chunk the pieces off of the shoulder as opposed to slicing or pulling them. I season the shoulder the day before and leave it uncovered in the refrigerator overnight. This allows the outside of the meat to dry out rendering a crusty finished roast. ingredients 3 - 5 pound pork shoulder (the weight of the shoulder does not change the recipe, just the cooking time) [...]

roasted shrimp, tomato & feta ~

The richness of the tomato sauce blends so heavenly with the shrimp and feta in this recipe. I made my own tomato sauce in this recipe which takes about 25 mins to simmer but if you don't have the prep time any great jarred sauce will work just reduce it in the skillet about 5 minutes and add the honey to it. You want a sauce that is on the thicken side not watery or runny.  Simmering for that 5 minutes will thicken the sauce and the honey will caramelize the shrimp just slightly. I used a cast iron skillet because [...]

cauliflower sauté

As tasty as this is colorful....a terrific vegetarian stir fry. Any of our Sous Salts would work in this recipe. Our Sweet & Savory has turmeric in it so if you use that one no need to add the additional spice. ingredients - 1 cup raw cashews 1 large fennel bulb, plus ½ cup fennel fronds, divided ⅓ cup virgin coconut oil, melted 1 tablespoon whole black mustard seeds 6 scallions, thinly sliced 2 medium sweet potatoes or garnet yams, unpeeled, cut into ¾-inch pieces 1 medium head of cauliflower, cut into 1½-inch florets 2 green chiles (such as serrano or [...]

fried brown rice ~

Short grain brown rice is the star in this Fried Rice. Unlike most rice prep this recipe calls for boiling the rice like you do pasta.  I used my instant pot to cook the pork shoulder in the time it took to boil the rice. But you can use bbq ribs that you've removed the meet from.  What gives this rice it's flavor is the hoisin and sesame oil. The brown rice adds a nice chew to the dish. ingredients 2 c brown rice 1 T Porcini Mushroom Sous Salt 1 T hoisin sauce 2 eggs scrambled 1 t red pepper [...]

seafood chowder ~

This soup came together after a week away with the family. We needed something quick but as always ...it had to be flavorful as well.  I used Sea Bass, Shrimp and Spicy Sausage. You could use Salmon, Halibut or Cod in addition or as a substitute. There are so many different kinds of sausages being made today so experiment with some other varieties.  There is a chicken artichoke that would be tasty with cod and scallops. I used salsa because it already had the garlic, herbs and tomatoes as a base so it jump started our soup prep. I used our [...]
